Inihaw na Liempo (Grilled Pork) How to make a perfect marinade for Pork Barbecue?

I recall every weekend when my family gets together, and this is something we always cook and look for. This is a “must have” dish every summer outing. And the smell of pork together with the aroma of charcoal is heaven!

Liempo is always my first choice in inihaw. Though you can use Pork Kasim or Pork Pigue, cut it into small or bite size and put it in skewers or stick. Chicken is also the best alternative if you don’t like pork.

Grilling the pork with a bit of fat makes it more yummy! Adding Mama Sita’s Barbecue Sauce is another story. I’ve been trying so many sauces and marinade sauce for the longest time and finally found my “the one”.

Mama Sita’s Barbecue Sauce gives a unique combination of Asian spices based on our famous recipe that comes together to make Philippine-style barbecue delectably delicious. Trust me on this one: after you’ve tried it, you’ll never go back to your old marinade recipe sauce.

This recipe is incredibly easy to make: just add the sauce to your pork and voila! Marinade for an hour or overnight, and that’s pretty much how it works! I sometimes add calamansi for a stronger citrusy flavor, but it’s excellent without it as well.

INGREDIENTS:

1 Kilo of Liempo (Pork Belly)
1-2 cups of Mama Sita’s Barbecue Sauce
8-10 cloves of minced garlic
Dash of ground black pepper (optional)

FOR THE GLAZE (Sauce)
1/3 cup of Banana Ketchup
1/3 cup of Cooking oil
Add the remaining marinade sauce

INSTRUCTIONS:

1. Put meat in a bowl and pour in the marinade sauce.
2. Add garlic and pepper
3. Massage the pork until the marinade is equally distributed to the meat.
4. Marinade for an hour or overnight for best result
5. For the glaze, strain the remaining sauce and add ketchup, cooking oil and stir.
6. Apply the glaze sauce while grilling the pork (both sides of the meat)
